Since my first road puncture I am now taking out two spare inner tubes with me. I always used to take one, but for longer rides two makes sense. Does everyone else take two? Also I used Co2 to inflate, I am not sure if this is a waste as I do own a pump I can take with me, it's just quicker to inflate.

i take one spare tube. C02 (2 cannisters) and a small pump.

Yes very much so, especially after getting a flat from hitting a pothole, you take it for granted on a MTB, but its all relative as I've had pinch flats before, which was why we went tubeless.

A cheaper alternative to the road drive - which I have after losing an expensive pump is the lifeline pump from Wiggle which is excellent value and works really well.
It's usually ten pounds but is eight quid at the minute.
