How to cook Lamb Shanks?

Who are the Gordon Ramsey's or Delia Smith's in the cafe? I Love eating lamb shanks, but don't really know how to cook them. Are they cooked really slow for the whole cooking time? Or started off high and then turned down low? Your suggestions please.;)

Can't remember the precise recipe, but I remember getting the butcher to chop them into shortish lengths for me (easier to get at the marrow), and stewing them for ages in a mushroomy winey sauce with lots of ras el hanout (get it in turkish or middle eastern shops) and cinnamon. I'll post the proper recipe here if I can find it, as it was pretty good.

Cook them slow. Red wine and garlic works very well too. I use a Nigel Slater recipe. I'm sure you could find it or similar on the internet if you don't have access to his book
