If I only shaved one leg, would it make me only half as fast over my present speed as if I shaved both, and would it allow me to corner faster in the direction of the shaved or unshaved leg.

Gping round in circles, which way do you want to go?
For a track cyclist, the upper leg.
On sloping roads, depends which way it slopes, and whether your coming or going.

You could try shaving the front half of both legs to provide an aero profile to the direction of travel.

Depending on how hairy you are though too, the disruption vortices created by the remaining flapping hair could suck you backwards
Why not just the outer front quarter on one leg, the inner front on the other?
