I've grown about a dozen large tall sunflowers in my garden.

I have hoping I could harvest the seeds and eat them - in doing so fill myself with vitamin whatever.

The seeds seem to be quite soft and almost watery, they are white in appearance - even with the shells on. They don't have the consistency of the one you get in the shops which have a zebra-style shell.

Do they need drying out ?

Is there anything I can do to make them edible ?

You could leave them out there was a valuable source of winter food for your local wild birds..

As waffles says - you could leave them out for the birds or dry them in your oven on a low heat for eating yourself.

I did pumpkin seeds in chilli and honey this way .
