Racks and panniers?

Hi

I'm a total duffer with this subject but could use any help I can get!

So I have two bikes - a 2006 Claud B. Levante and this year's GT Avalanche. If I wanted to pannier either of them up, how do I figure out which if either can have these things fitted and how do I go about fitting them?

If the Avalanche has disc brakes then it'l need a disc specific rack .. i had to buy one for my Terrago

I used a Topeak rack
