New Zealand, as I got citizenship when I lived there for a few years at the turn of the century, and it's a fantastic country, although not ideal cycling country due to the shortage of minor roads.
Otherwise, if we'd still been in the EU, then France, which does have the minor roads.

T'was Pennsylvania where I worked. An interesting placement with massive contrasts between the rural areas and towns. I was renting in the edge of Amish country by day, by night was a bodyguard and driver to a firm of midwives in Philly.

I should have said rural Pennsylvania!
Philly's pretty rough I'm told!!
