11-42 Cassette to go with SRAM Apex 1x mechanical brifters

No, and yes.
11-speed Shimano and SRAM cassettes and chains are fully cross-compatible. The derailleur's got the capacity to cope with the cassette, it'll work fine.

As Stu ... no problem. I would pay a bit more for XT though, got one and terrific shifting.

Unlikely anyone would notice the difference between very good (Deore) and very good plus a bit (Deore XT). Certainly can't spot the difference between my 94 XT and 97 LX RDs*. Go for the cheaper one...

indeed, I probably won’t change gear that often around here once I only have 11 anyhow
