 Not bad...not bad at all...

SWMBO has one arm in a plaster after cutting a tendon in her fingers so she's pretty much incapacitaed, i've been fitting an electric shower all morning, so there's too much going on to concentrate on preparing dinner...no time even for a ride today
So, roast chicken, aunt bessies roast potatoes, yorkshire puds, sausage meat stuffing, pre prepared new potatoes with leeks and cabbage.
Quickest and easiest sunday dinner you could prepare...and really quite nice too. Never going to compete with a home made jobby....but not bad at all

Just thought i'd share...

The quality of things like that has improved a lot in recent years IME. We always have frozen stuffing balls and yorkshire puds in the freezer as standbys for when time/energy is in short supply. Still can't beat the home made variety for me, but quite acceptable when the alternative is going without.

Hope SWMBO is enjoying the enforced rest!

Why not make a few extra home made roast potatoes and yorkshires one day and freeze them for emergencies? That's what I do.

Yorkshires yes...we do that when there's too much mix been made..they keep and cook perfectly well. Never thought of doing it with the roast potatoes !!
