If you don't mind me saying,it's not a huge budget for a new one,so I would look to buy second hand .
And I would not touch Carrera's IMO

2nd hand or Decathlon. Carerra Subways get good reviews generally and do hit the 2nd hand market.

Wife is 5' 7", few extra lbs, not sure how keen she is, doesn't want to be seen struggling, wants it flat but wants to join me

So many men say to me 'oh she doesn't do much cycling so don 't want to spend a lot. But she'll be even less keen if you buy her a cheap, nasty heavy clunker of a bike - get her something decent if you really want to encourage her - if you have a budget limit buy a decent brand second hand

I had a Subway and it was an excellent all round bike

I sold my Specialized Ariel Sport for around that price. Very easy to ride, front suspension, step through frame and disc brakes (brakes were the best on any bike I have ever owned). Any second hand Spesh hybrid would be good.
