There are all kinds of reasons for it, my guess is you hit a bit of a bump & the spokes 'slapped' the reflectors which broke their retaining mechs. The result is flying reflectors. The likelihood of it happening is low, but I've seen what can happen & it's nasty.

Why take off the dustcaps?

They are unnecessary on Presta valves, as are the rings they come with. Although I keep the rings as they can be useful for inflation, particularly at the side of the road!

Schraeder valves are more likely to accumulate dirt if you are off road.

As for reflectors, they are only put on a bike as a legal requirement I believe. Ridiculous things that serve little purpose. You are better off with reflective clothing.
