we grow 1 courgette plant each year and this year crop has been very plentifull , so to avoid letting them go to waste my partner started looking for other ways of using them and came up with courgette and chocolate cake muffins !!!

taste lovely and look like normal chocolate muffins .

recips supplied if required

any other ideas as we are going to have more room veg next year :wacko:

You could do a picallili or make some preserves/chunteys with it?

I remember my Dad having a glut and making wine with them. It wasn't entirely successful.

My Mum makes "courgette slice" with the glut. Mix grated courgette, flour, cheese, bacon, eggs, bake in the oven. Google should give a recipie. Mum also told me the other day that you can apparently freeze raw grated courgette and use it the thicken soups/stews/casseroles.
 
Grow another Courgette plant next to the one you have and the crop from that plant will diminish.

You could try to trade them with other producers. Think other veg, apples, eggs, honey, flowers etc etc.

I keep imaging that a community mini market cum car boot sale could work in a lot of places, especially villages where there is no local shop with fresh goods.

courgettes ... ours have finally started producing :tongue: :tongue: :tongue: :thumbsup:
So we've recently had green thai curry with courgette slices, pasta with bacon/courgette/double cream sauce, vegetable lasagne, courgette/red pepper frittata, and I'll probably do some courgette & carrot cake during the weekend. If you do a search on CC for "carrot courgette cake", you should be able to find the recipe.

My teenage daughter made savoury cheese and courgette muffins for her lunch box for a few weeks.

CrinklyLion introduced me to the concept of cheese flapjack, and I believe you can add grated courgette to that too.

Cheese Flapjack. Think for a minute. Odd? Unusual maybe, but really nice.

Imagine the baked cheese flavour you get if you flake the cheese off a cheese topped roll, but with the fillingness of flapjack...
