Terang ayak - bitter yellow aubergine 'curry' you get on Borneo - is extraordinary and I ate about three bowls a day. Even Scooby doo is a bit of an aubergine fan.

When my dad first grew them in the seventies there was al sorts of nonsense about having to desalt them, which we usually ignored

My current fave is one with baby aubergines
stuffed with peanuts and coconut from the Pradesh gujerati cookbook
Sensational dish. Never seems to be enough though!

Lovely purple and shiny on the outside, but when you cut into them - grey! There is no other vegetable that promises so much, but delivers so little.

However they are great in a vegetable lasagna.

What other vegetable promises so little but delivers so much. The name of God occurs regularly.

Ratatouille for me - cheap and easy to produce an impressive and delicious three-dayer!
