The jet propulsion for your rocket could run on ethanol.
This is what the Germans ran the V2 rocket on, basically ethanol is potato vodka.
From memory it was something like 40 tonnes of potatoes to power one V2 rocket

To see how potatoes can be grown in space see the film 'The Martian' where person, castaway on Mars survives on potatoes.
Potatoes can be grown vertically in gel, so you dont need a lot of space (Check out the real growing methods at Thanet Earth)

Advance hydroponics as used by Thanet Earth (who grow 5% of supermarket salad in the UK)
