How much to re-hub 2 wheels?

btw swapping from Deore non-disc hubs to, say, Deore disc hubs might mean changing all the spokes as the hub flanges may be different diameters.

My local LBS charges £20 per wheel to build + all the parts at RRP.... and their spokes are chuffing expensive.
On which basis you might as well just buy a new set, but if you can learn to do it yourself, as Greg says it might be worth it.
I'd recommend Roger Musson's Wheelpro book http://www.wheelpro.co.uk/wheelbuilding/book.php as your first purchase. More than comprehensive enough for the first time builder, but very very clear instructions and diagrams .

I have a second wheelset for my Croix de Fer to keep the studded winter tyres on.

I bought pre-built 29ers as they were easeier to come by with disc hubs, and added the 160mm rotors, cassette and rim tape myself (I did have to get a little grommet to convert the schraeder hole into presta size). Now I can swap wheels over in minutes if it is snowing or is icy.

Your best bet is to get the LBS to change the hubs over, or take on the challenge of building the wheels yourself as you'll only have the cost of the hubs and rotors, plus labour
