If you're intending to use the Trent and Mersey Canal, Coventry, Birmingham and Fazeley and Grand Union Canals, be aware the towpath is almost unrideable rough in some places and missing in others, including tunnels, so you'll need to use roads for those.
Stopping a bit short of Camden Lock may also be a good idea, as cycling is banned at the lock itself, last time I tried.

https://cycle.travel/map is pretty good but you will have to keep dragging the route back to the canals. Free registration required to save and download routes.
There is a "show accommodation" button but it might have a crisis with a long route or at least make the map a mess, so better to click the route at about the right point and "show accommodation" on the popup.. You will still have to contact hotels/hostels/campsites to check what the bike accommodation is like, as it's not perfect.
