I need to buy a new iPad, and no, another make is out due to various reasons.

On looking (I`ve just started), there are all these new ones (I am replacing an old iPad 2), and where to start? iPad Air, 1 and 2, the iPad Pro, etc etc.

What one is most like the old '2, only better??

Thanks!

The 3 is a bit thinner and a bit faster.

Depends on your use

I use th BIG iPad Pro for work and watching films etc as the format is brilliant for documents are actually A4 so you no longer need to scroll up and down

However it is bulky so for weekends and touring I use the smaller version

Apple Pencil is a delight as well.

Maybe go to a retailer and look at the options? See which one fits your needs
Air lighter, pro bigger, definitely get with a retina screen IMO

John Lewis will give you a longer warranty free, otherwise you'll need to at extra for AppleCare
If you want to save a few quid and happy with a year warranty, once you've decided which one see if the apple refurb site has any deals

I have a big iPad pro with pencil. I use it for reading sheet music while playing violin as the screen size and aspect ratio is so close to A4.

I also do quite a bit of sketching and i do a lot of note taking on it too with the pencil which is fantastic.

The air is the replacement for the regular iPad. If you have a need for the pencil then grab an iPad Pro 10" unless you need the size. If not doing any sketching etc. Then grab the newest iPad Air.

The Air 2 would be the one I'd go for.

If only the iPad had a USB stick to allow me to watch movie torrents  My iPad 2 is getting a bit long in the tooth now so I'll probably upgrade at some point in the future.

Your iPad 2 will be able to be jailbroken. From this you can install Kodi, and the various add-ons, to watch whatever you like.

Yes, that's true. I have the Kodi add-on on an Amazon firestick.
Plenty of unlimited sports streaming. I quite recently watched the Anthony Joshua fight.
I have Sky, but am not prepared to pay for the one off's like the boxing. Sky rip you off enough!
Tonnes of other stuff on Kodi too.

We have recently bought another iPad, As we didn't want a mini the choice was between a iPad Air 2 64GB or the iPad Pro 9.7 with 32GB. I read 16GB does not leave much spare storage so discounted the iPad Air 2 16GB. In the end the better camera on the iPad Pro and faster processor swung the decision over the Air 2 as there was not much difference in price. The sound is also a great improvement over the old iPad. The price of the iPad Air 2 has now come down, I might make a different decision now, but in the longer term it was probably the better choice.
