Set proper access rights on your shares as even if the drives are mapped then they won't get encrypted if the user doesn't have permission to write to the share

With the "backup" share set that so that only a service backup user can write to it. This will prevent your backups getting encrypted

Like others have said, have offsite and offline backups and test restores regularly

Well I didn't exactly use that but it got me started and now I have a backup running plus I'm using rsync for the photos. Thanks again.
