I find the shift is better with the body more horizontal especially when using close(ish) ratio cassette, like you have.
Minor point really and it might be set to it's horizontal limit already - hard to say without seeing it in other gears

I knew what you meant, I've just put a new cassette on, coupled with the new wheels. I haven't fettled the gears at all since the bike arrived in the post, it shifted perfectly straight out of the box so I haven't bothered fully fettling yet. I've heard a couple of people say that about getting the body horizontal.
I'm still umming and aaahing over getting 11 speed...

11 speed - if you have the cash burning a hole in your pocket go for it!
You clearly have no cash flow problems to own such a machine in the first place.
Otherwise, fine as you are I'd say.
