I should add that for every 8 oranges I add one lemon for the tartness. However, the quantity of ingredients are dwarfed by the vast amount of sugar that goes into the making.

I use a 1:1 ratio fruit to sugar like I do for jams and jellies.

I saw comments about availability of Cara Cara, Lane Lates, not so much Navelina iirc but of course the season for each of these varieties are quite short, same for Sevilles.
Most people just see 'oranges' when they buy them, truth is there may be six different varieties they're unwittingly buying through a year.

There are varieties which I do prefer, so I look out for them. But yes, the season for each variety is limited, and it's much like apples, insomuch that you get early, mid and late season varieties.

Most oranges are decent enough, but I do have a preference for the late-season Spanish fruit. I think they have the edge. Current oranges in Tesco are from Egypt. And yes, you *do* notice the flavour difference between the varieties. Navelina tend to be sweeter than Lane Late, but the latter are more "orangey".

Dalmain is a good place to visit. Nice cafe and small but pleasant garden. We pop in to replenish marmalade stock when we are passing, usually Jane’s or George’s and the years winner.

Drat... This is something I'd have liked to enter. Next year, maybe...

Dreadful stuff, the product of seasoned food criminals. School dinner ladies are amateurs in comparison.
