Gonna be honest , due to being force fed milk that sat in Classroom all day ( prior to Thatcher stealing it ) I cannot drink the stuff on its own ! I’ll have it in tea and coffee, even cereal but only if said cereal is sweetened . Otherwise it’s rank rotten . Just a wee mental block thing I’ve carried for nearly 50yrs lol

I used to hate that milk and never drink it neat since.

Can't comment on the taste, but frothing is a result of the fat/protein ratio. You need fat to create the texture through bubbles, and the protein to stabilise them. Coffee shops use whole milk as it has a higher fat content giving a denser and creamier foam. Theoretically something could have been added somewhere along the food chain which is affecting the taste and froth, but it is perhaps more likely to be a reflection of the production methods affecting milk quality (higher degree of pasteurisation for example).

I'm sure you're correct but I recently got a bean to cup coffee machine with a steam wand frother and bought some full fat to try with. We normally get Asda semi skimmed. Although I mainly drink americano style with a drop of cold milk added I do like an occasional latte or flat white. In the end I could barely detect any difference, and if anything slightly preferred the semi skimmed.

To be fair, I can barely detect any difference either! I think coffee shops just view whole milk as slightly more foolproof and I guess it has just become the norm now.

I have milk delivered from a local farm, I can get orange/apple juice, eggs and butter....I know the family personally and walk past the cows on the way to the local. If you're in Rochdale/Royton/Middleton and want their number pls pm me.
 
As I only ever drink coffee black
and was also affected by being "forced" for drink milk that we had been watching sitting on the school doorstep in the sun for several hours

then my opinion regarding frothy coffee - or any coffee polluted by milk - is not worth anything

however I do wonder if the things they do to the full fat milk to stop it separating into milk and cream that was always very clear in the old days
but now never happens

I seem to remember that they emulsify it by breaking up the fat molecules so maybe this has an effect on the frothing ability??

still ruins good coffee though!
