N+1 time, keeping it real with Steel

It looks like N+1 is on the cards.
I have a carbon bike & a titanium bike so for the next bike I'm thinking a classic steel frame & build it up from there. I think I've narrowed it down to these frames:
Bob Jackson Olympus Road 853 frame & forks/725 rear stays (£750)
Condor Classico Road frameset Dedacciai Sat 14.5 steel tubing (£899)
Mercian Cycles, either the Professional (£1020+vat) or the Pro Lugless (£1040+vat) both in 853 Pro Team tubing. I'm steering more towards the Mercians, I've seen @topcat1 Mercian in the flesh and it is a lovely bike, just not sure whether to go lugs or lugless. I like the look of both, the classic lugs look and the smooth finish of the lugless (think I like the lugless a little more)


The groupset will probably be Ultegra and the wheels probably hand builts. I like the look of Royce hubs, but which rims I don't know, or should I buy something like a pair of Dura Ace 9000 C24's. Also not sure which bar/stem/seat post combo to go for. Saddle and bar tape probably Brooks, or maybe a Fizik Arione and Fizik bar tape. Hmm decisions, decisions.

Thoughts?

It's a bit more complicated than that...
You've got two fast road bikes, and you want another fast road bike? One thing I like about my little collection is that each bike does something different. So if I want to go quickly on the road there's a bike that's optimised for that. If I want to go to work, there's a different bike for that.

I also have a hybrid that I use for work and nipping around town and a MTB that hardly gets any use. Fast (for me!) road cycling is my thing. Thats why I'm after another road bike.

Thats 520 cro-moly, and only gets used in wet weather as its my only road bike with full mudguards. I fancy a full on 853 racer

Damn, why do I search the Internet. Just seen a fully built s works sl4 for £3000. Hmm maybe the steel bike should be put on hold for a few years.....
