Has anyone purchase a bike from an online retailer where they give you 2 options, fully built in 9-10 days or 90% which is next day delivery and £35 cheaper

Merlin cycles state you have to fit the front wheel and handlebars and setup gears which doesn't seem much. I take it all shifters etc are all fitted to the bars

It really depends on the shop, some do more setup than others and some do a terrible job of it.

I have never received a bike that has been properly indexed, whether bought online or in store, I feel this is because the indexing is done in a bike stand and not tested under load.

I have had front ends set up varying from: everything done, just the handlebar needing to be put back onto the stem, to: front fork, stem, bars and wheel need fitting.

Check with the shop exactly what they'll do. If not 100% confident, don't buy online!

Get it to do it yourself youll get it much faster and its not a hard job at all, its stuff you need to adjust anyway after you get ot fully built
