I think it's much easier to take the door off - which takes just a minute or two. Painting it when it's flat on trestles avoids the possibility of paint runs, and makes access to the frame easier.
I've had 2nd thoughts about taking the doors off...fire doors weigh an absolute bloody ton!
Spoke to a carpenter who suggested using wide masking tape over the hinges then run a Stanley knife along the edge of the hinge to get a perfect covering of the hinge.
