Spent a week or so there when the tour started in Brittany, 2 or 3 years ago. As well as the canal, which is very scenic by the way and, can be ridden in its entirety, there are also rivers which have towpaths. Using the canal and rivers, you can do a few loops, 30-100km. The roads were quiet, mostly well surfaced. Lots of forest tracks, tho we don't ride these. There is a bike museum, about 20 miles away, forget the placename. Carnac and Quiberon are 2 nice beach resorts about an hours drive away. Quiberon is on a peninsula, ideal 4 riding. Pontivy itself is a nice town, very much built to service Napoleans armies. North of the town for hilly stuff, south for flatter terrain, tho none of the hilly stuff is taxing. The tourist info office is stuffed with leaflets both for biking routes and places of interest. Enjoy. We did.
