Really easy to do, a great user-upper of random egg whites, and way nicer than the ones you buy in the supermarket.
150g desiccated coconut
150g caster sugar (I prefer golden granulated or caster sugar as it's less sweet)
Heaped teaspoon cornflour / potato flour / rice flour
2 egg whites
Mix the dry ingredients together. Whisk the egg whites to stiff peaks, and then fold into the dry ingredients. Roll into ping-pong ball sized balls and bake on silicone (non-stick) baking paper in a preheated oven, 180C / 160 fan for between 8 to 12 mins until light golden.
If you have edible rice paper, use that instead of the silicone baking paper or re-useable silicone baking sheets.
Cool for a few minutes on the baking sheet before transferring to a wire rack. Makes about 18.
