Instead of using tin foil, wrap the fish in wet (water/lemon juice) newspaper. Not only is it novel to serve, but the skin will stick to the newspaper when you unwrap it.

Wrap it in wet newspaper (like Alan says) and bake it for 20-25 minutes. Serve with chilli and lime butter.
