Just reading the other soup post gave me a bit of inspiration, I love soups but have no idea how to make one:blush:!! I`m pretty good with food so not affraid to have a go, anybody got any favourite soups and how do you make them??

That`s a perfect tea after 10 miles from work in the herendous winter that we seem to be having down here!!

Soak half a kilo of dried big fat green peas overnight,
boil or bake a bit of ham/gammon,
start the peas in some stock in your biggest pan,
add gently fried finely chopped onion,
let the ham cool and chop it and chuck it in and cook slowly for ages and ages stirring every now and again adding more water/stock if there wasn't enough to begin with and to get it to the preferred consistency.

Seasoning is entirely up to you, I chucked in a bit of chorizo for the taste and a load of lentils last time I made it. Spuds could go in as well, especially if they need eating up and they're good if it's a bit salty from the stock or pig product.

Apologies if you wanted a vegetarian recipe :biggrin:

Soups are fantastic... what are your favourites and maybe someone will have a recipe for it. My favourites are tomato, butternut squash, and chickpea soup (that is 3 different soups:biggrin:).

Edit just seen longers post and it reminded me that lentil soup too is a favourite.

Veg is easy. Chop up any veggies that you have; place in a large saucepan with a nob(;) of butter and heat for a short while. Add a quantity of stock and simmer until the veg is soft. Then mash if you like or don't if you don't. Salt and pepper to taste. I also sometimes add a bit of chilli although not too much.
Then eat

Start with sunday left overs. boil up bones + stuff. Drain. fry a fresh onion and maybe potato, add stock that you've just made and meat and veg towards the end.

Sweat off a large leek in butter for 10 mins.
Add a medium spud diced
Add 300ml chicken stock (Knorr cube)
Season and simmer until spuds are soft.
Add 200ml milk
Blitz until smooth, add more milk if needed
Reheat, remove from hob and add a small handfull of grated cheddar, stir in.

Secret Lemonade Drinker
Just had curried parsnip soup.

2 cloves garlic, 1 onion, 2 parsnips (finely chopped), 1 carrot (finely chopped), 2 celery sticks (chopped), 300 ml chicken/veg stock, 3 tsp medium curry powder, 2 tbsp grated hard goats cheese, 2 tbsp double cream. (I added 6 dried chillies but it was too much) Sea salt and black pepper to season.

Finely chop onions and garlic and saute in a little oil till soft, add vegs and stock and cook 6-10 mins or till soft. Add curry powder, grated hard cheese and cream and cook for about 4 mins.

Blend till smooth, add a little boiling water if not runny enough.

Serve with fresh bread.

Will have a "play" over the weekend and see what I come up with - something nice hopefully:thumbsup:

mmmmmmmmmmmmmm - love soup!;) My mum's alway's got some on over winter, popped in today and had three bowls.:wacko: Not got any good tips for making it though - sorry! :wacko:
 
The two idiot proof soups I do are butternut soup and carrot & ginger soup.

Butternut soup - literally just chop up a butternut, put it in a pan, put enough stock in to cover the butternut (about); add about 5ml cumin seeds, boil till soft then puree (we have a Braun stick blender).

Carrot soup - fry an onion up (sliced small) until soft. Add 500g chopped carrots and '2 tablespoons' finely chopped fresh ginger. Leave for about 5 mins ('sweating' the veggies), then add stock (again to cover the veggies). Add 1 Tablespoon honey. Boil till soft (about 30mins) then puree, adding a tablespoon of butter if you want.
 
Butternut is stunning and SavageHoutKop's recipe is pretty much all you need to do. I add ground cumin and ginger to mine. I love the texture - it's just so velvety.

Another favourite of mine is Thai soup. Start off by frying up your garlic, spring onion, ginger and chilli, add stock, lime and fish sauce. Bring to a simmer. In the stock cook up your chunky veg: baby corn, sweet potato, mushrooms, cherry tomato for 5 mins, and at the end add some ready cooked prawns and chopped fresh coriander. It's quick and easy. You can also add rice noodles for some extra carbs. Cook them seperately and put them in the base of the soup bowl before putting the soup on top. Dead healthy, like!

My butternut squash is similar but with garlic, knob of butter, and then varying spices but usually corriander, cumin etc. Serve with home made rolls.
