The Sierra de Carrascoy to the SW of Murcia go over 3000 feet and nearly as high to the S and SE although the road passes will be lower. I have cycled from the airport over to Totana (SW of Murcia on the N340) over the Sierra de Espuna to Zarzadilla (high and scenic), then down over the Sierra do los Filabres (higher and wilder) and back up through Aquilas and Cartagena. To get to bigger climbs than that you will need a car, but TBH I think you would find plenty in the Cartagena-Lorca-Caravaca-Murcia box to keep you well exercised for a week.
I used the Michelin 445 @1:400,000 but you might want something centred on Murcia at something like 1:200,000.
