I am considering a Staiger Ontario with Rohloff gears, hydraulic rim brakes and Suntour forks. I have a touring bike with drop bars but would like to try something with flat bars. I can't find much on the Tinternet about them.

Would anyone have experience of them?

I have a Koga World Traveller with flat bars. Its an excellent touring bike. It is all a matter of personal choice. I like flat bar bikes and my partner prefers drops.
 
I can't help on the make, but I have a touring bike/expedition bike with a Rohloff hub and flat bars and love it (Thorn Nomad mk II).

Just back (OK by a week) from my last tour and I so love the bike.
We stayed away from hydraulic brakes because of where we planned to tour, but this may not be an issue for you... We do have rim brakes though - CSS rims with special ceramic blocks - finally worn through my first set of front brake blocks after a little over 11,000 miles of heavily laden touring. the original rears are still going strong!

Just my opinion, but I really think you just get used to riding with whatever you have (within reasonable limits of fit). I've toured on flats (admittedly with bar ends), drops and trekking bars. At the end of each of those tours, I've thought each setup was perfectly suitable.

Obviously you have to make sure you have the right stem to go with whatever bars you have, but my only concession to flats would be the addition to bar ends to allow for a different hand position. Aside from that, I'd recommend them (as well as drops and trekking bars too!). Again, I just think for the most part it's what you get used to.
