That's a good route and you will see a lot of alpine scenery. However, if you start at Ulm you might want to consider the jewel in this neck of the woods which is the Upper Danube Valley between Sigmaringen and Tuttlingen. You can then get from there to Radolfzell on L Konstanz and then pootle 20km to Konstanz itself and so pick up the Rhine. If you've seen alp-type mountains before, you might want to consider that.
