I can't find a c.t guide to the two seas route (Garonne and Midi canals), but that may not be its correct name.

This is one of the things confusing me. Doesn't the Canal de Garonne start in Bordeaux?

No, the canal starts further up the River Garonne, near Castets en Dourthe. The mouth of the river is navigable so no canal needed.

No, we forked off the V80 before reaching the canal.

I can vouch for the Velo Francette - did some of it last summer when I went to visit Wafflycat, formerly of this parish. The Danube is a lovely ride, did that quite a few years ago. There are companies that will organise it for you and move your luggage along each day - https://www.upperaustria.com/en/oes...080/danube-cycling-from-passau-to-vienna.html amongst others.
Cycling around Lake Constance is quite good too.
