Penguin obviously must have a distinctive enough taste as I seem to remember reading in The Worst Journey In The World (1922), that Scott and his men sometimes had things to drink which

'tasted suspiciously of Penguin' :laugh:

Considering their main diet of fish, squid, krill and so on, I imagine they must taste just a bit fishy or at least distinctive enough for it to be picked out as a particular flavour, like lamb.

A bit fatty for a stew I'd have thought. Give it the duck treatment and roast it.
