Upgrade advice

Hello from a new member in North Norfolk.
I'm looking to upgrade from a ladies Claude Butler Hybrid bike used for touring trips in France.
Have looked at Dawes Galaxy and Whyte Caledonian (in the flesh!) and online at Cube Delhi Pro, but if I'm honest, I don't know what I'm really looking for apart from improved performance from what I've already got. Have any ladies (or chaps) out there got any good advice for me?

Can't give you advice on bikes, but surely somebody will come along shortly with loads of it.
