Where Jamie excels is that he tells you why you're doing something, how it's supposed to work, and all that stuff, whereas Delia is more like cooking-by-numbers. Which is fine until you're dealing with, say, eggs of a different size Because all of a sudden her follow-the-rules doesn't work, and you've nothing to fall back on.
