What are you doing with the Xmas leftovers?

So far we've had:

Xmas dinner for 4
Reheated leftover turkey and veg for 2
Devilled turkey

We've also made about four pints of turkey stock with the carcass, and we have at least a pound of turkey meat left, as well as some of the chestnut and prune stuffing I made which should go well with pork.
Oh, and today I flash fried the turkey liver (having used the rest of the giblets for the gravy) and had it on toast for lunch.:biggrin:

£25 on a nine pound turkey is beginning to look like pretty good value. What have the rest of you done with your Xmas dinner leftovers?

Had a reheated Xmas meal today, with all the left over sausages and veg. Parents in law didn't come as FIL was unwell so we have about a 1.5lbs of meat left. We just have a turkey breast so no stock but there will be a turkey curry of course and some sandwiches, yes very good value. 4.2lbs of turkey breast about £18 has given us 11 portions already and plenty still to come.

We had a guinea fowl and there wasn't much left over tbh. Got Pheasant tomorrow, which i'm really looking forward to. not sure there will be much of that left either :biggrin:
 
We had turkey crown, smallest I could get. I don't normally eat meat but with my Mother coming, it wasn't worth arguing. 3 for Christmas dinner, 2 for dinner on Boxing Day, 2 for dinner today. In between Merlin has had lots of treats. There's still enough for almost another 2 meals but we've had enough! It's sliced in the fridge and Merlin can eat it otherwise it can go outside for the birds! (cannibals)

Christmas dinner was salmon...no leftovers. Had roast beef on Boxing Day and have just finished the leftovers ;)

We do have a cheese mountain to demolish though.

Thick slices of leftover ham, dipped in beaten egg, then breadcrumbs and shallow fried:thumbsup: Should work for turkey too.
Also made a Caesar (style) salad with turkey bits, avocado etc for lunch.

Am slowly munch munch ploughing my way through chomp munch all our leftovers munch chomp burp quite happily:biggrin:

Got Turkey noodle soup for lunch tomorrow....a bit of Pho Ga (well, not ga, as that's chicken but I don't know the Vietnamese for turkey ;))
