I know it is a stupidly silly question but when putting my rear wheel back into the drop outs how do I centre it and equal it each side if you get me?

Put the wheel back in with the bike the right way up, then you can lean on the saddle before doing up the quick release, this will ensure the wheel is pushed fully home in to the dropouts which should centre it for you.
