Regreased other halfs touring pedals , easy to do just fill screw in end cap and around the bearings. Forces out the old grease as you screw the end cap back in.

Lovely for you, but the proper way is to clean off all the shoot prior to opening the end cap. This prevents any carp getting in during the 'service'. You then remove the cage and press grease in via the end cap port (your choice if you use a protective glove or your bare thumb) until it purges out past the spindle seal. At this point you can refit the end cap and then the cage.

Some people claim to have fitted a grease nipple in the end cap for easier purging, but it's thin plastic and the locknut is only just beneath, so it sounds doubtful.

I use the thumb method for M323 SPDs. It is quite hard work.

She has another set of ancient xt pedals and they do have a grease nipple. These old pedals have an alloy threaded cap, you need to remove the cage ( 4 threaded screw's) to fit the grease gun onto the nipple.
