I use marine grease which doesn’t go hard and works well.

Bog standard car grease. Mahoosive tub bought decades ago for about a fiver. I have tried tiny tubs of bike specific greases for about a tenner, but the only real difference i can see is they empty quicker and cost more.

lithium grease on any threads, carbon paste for seatpost assuming its carbon or anything else carbon to carbon. general grease in a BB, that's just to keep moisture away from any metal bits assuming its a modern-ish sealed bearing type, lithium on the threads..

my dad had a tin of grease that had a circle of metal resting on the top with a hole in it, as did the bike shop

That's for filling the grease gun: unscrew the cylinder, place the end over the whole, and push. I'm not sure what the metal on top of the bike shop was for.

I always used to use Vaseleine. It starts to melt at 30 degrees but we never used to get those sorts of temperatures in the UK.
