The suspension forks on hybrids (where fitted) are generally short travel and designed to cope with a bit of bumping up kerbs and the odd pot-hole, rather than full on off-roading. I've ridden a few short travel cheap forks off-road and TBH they're more of a hindrance than a help.
Decent suspension definitely helps off-road, but it's not essential. Virtually anything can be ridden on a rigid bike - with the possible exception of big jumps - it's just a bit bumpier and a bit slower
