when I completed 230 mile over 48 hours a couple of years ago I found the best training program I designed was 2 days out on the bike some times 3. And 3 gym sessions strengthening certain muscle groups.
And now 12 months off the bike I’m getting my arse back in the saddle and entering the Wolverhampton to Aberdovey ride in June.

You should be fine with almost any kind of regular riding over the next 7 months, unless you aim to do the June century ride in a super-quick time!
 
Honestly, if your fitness hasn't gone down the toilet, I would think you could get back to fitness in 6-8 weeks.

But you have months, not weeks, so just start getting out on the bike. Do rides that are a bit taxing, whatever that is for you. If you are dead after 15 miles, then do lot of 10-12 mile rides. If you can happily do 30 miles now, I'd just (at a minimum) regularly do that distance at least once a fortnight until the days get longer. It will be easy to go from 30 miles in March to 100 in June.

If you can't do 30 now, then that's a goal to work towards over winter.
