26" Touring Wheel Recommendations

Hi All,
After been knocked off my bike last week by another cyclist (person on a bike) I now need a new back wheel as it was badly damaged and I may as well replace the front whilst I am at it.

My Dawes Sardar (steel framed version) was fitted with 26", 36 hole Mavic X139 black rims and non descript hubs which I assume the bike came with whenever it was purchased new. Just looking for ideas with what to replace them with and in keeping with the tourist load carrying capacity.

Shimano LX hubs and a Mavic rim?

See if you can find a Wheelbuilder to lace up a 4 cross rear wheel, the hub will depend on what frame spacing you have and how many gears but 105 or Deore would be about right and I'd stick with Mavic rims, then just get an off the peg front to match in with the rim/hub on the back.

Its fitted with 9 speed but just wondered if anyone had any recommendations for suitable rims and hubs for such a wheel build.
