I'm wondering if it is food safe to save on the washing up!

The answer is to clean the glasses. If they are cleaned properly condensation isn't a problem.I wonder how it would work with condensation (thinking of cyclists who wear glasses) - would the misting stay until the droplets got big enough or would they run off immediately?

You certainly wouldn't want a hydrophobic coating on, or in, anything living.Not the same product but a hydrophobic product.
