Im baking a couple of loaves. Both are the same - cinnamon oat and honey bread. One of them has got white stilton with apricots wrapped up inside.

They do smell rather nice!

Anyone else "knead their own"??

Yes, but not at 01:01 though...
My biggest problem with baking is cutting all the slices the same thickness and printing the wrapper...apart from that, it's one of the few things I don't take the rise out of!

Yes but I cheat and use a bread machine to do the hard work and produce the dough, then I put it in the oven to bake.

I bake my own and occasionally use the bread machine. It's great isn't it? Beat the hell out of the dough!!

Sounds therapeutic, perhaps I'll have ago

Recipe please?

I used this recipe for the dough (2/3 quantity throughout) and worked about a breakfast portion of porage oats, a fat spoon of thick honey and a spoonful of cinnamon powder into the wet mix before the kneading process. They're not the best ones I've done actually. Too salty. I'm going to revert to my Chinese dough recipe, it's not as fluffy as a baguette, say, but versatile and really good for onion buns!
