Providing everything works ok then I’d keep original.
The existing wheels may be ok, give them a try.
I’d probably go for a shorter quill stem which should be the cheapest option and keeps it looking original. I would go for a spin with the longer stem first and see how it feels.

Sat on it and measured,it's a good 3 cm to long and reach to the hoods feels over reaching

Gave it a clean , gears indexed , pedals and replacement bottle cages .
The stem is still an issue as apparently its a 26 clamp from what i can work out so not a popular size .I did want to keep the original bars as it would have been easy fix assuming i can get a stem that i can attatch without taking the shifters off but its looking less likely .
