I've only ever cycled mountain bikes. I'm currently looking to go from 20 miles to 40 miles+ hence why I'm looking at road bikes.
I have found two bikes within my budget (approx. £500) which have good reviews.

Triban RC500 Sora Disc
Merlin PR7 Sora
Triban RC120 (cheaper option)

I'm more concerned about comfort and fit than speed. Any advice would be really greatly appreciated. Thank you

I’d go for the Triban RC500, the discs will give you better stopping power in all weathers and the warranty offered by Decathlon on their bikes is unbeatable.
As for comfort you’ll only know when you ride it but you can change the saddle if it doesn’t suit, otherwise should be a comfortable with not too aggressive geometry.
There are quite a few Triban owners on here who will I’m sure chime in with their experiences.

As above really. That is not to say the Merlin is good or bad. Personally, I don't favour the extra weight of disc brakes over rims. Top riders go 40/50 mph and rims work for them.
