As I found this thread as a result of a search it would be rude not to chip in with my own suggestion, for a serious one it's got to be Where Eagles Dare.
And for some gloriously over the top comedy violence you can't beat Arnie hamming it up as John Matrix, taking on a tinpot dictator's army all by himself, and then despatching one of the campest bad guys ever with a Roger Moore style one liner.
