I use a Targus Defcon 3, cable tied to the underside of my pannier rack, to protect it from rain and to make it difficult to access. It has a remote control to activate it and it is sensitive to movement. I managed to buy a new one of EBay for 8 quid.
I believe either Lidl or Aldi had a version of this alarm not so long ago. I guess they go off if you try to brake the log or cut the cable, a different concept but still a good idea.

I'm just wondering if it might be a good idea to securely attached this cable lock to the bike so if they try to run away with the bike, they take the alarm with them.
