Bike pags needed for shopping an geneal stuff

Hi all
I had a pair of cheap pannier bags for years - many years but seldom used them
Over Lockdown they were brilliant and I used them for shopping a lot and continued to do so in summers after that

Well last year they developed a hole in the bottom

They were one of the type which has 2 bag joined by a piece of fabric which goes over the rack
and is held on by bits of Velcro in awkward places that takes ages to sort out
but they worked

Anyway - summer is coming and shopping by bike is getting more attractive again


so - what to do

Ideally I would like a pair that clip on and off easily - but are not easily stolen - which may be mutually exclusive
clipped on so I can leave one on for normal rides and just clip the other one on quickly for shopping


Ideally also collapsable so they can be big for shopping
but collapse and held smaller for normal ride which just need puncture kits and a can of coke or whatever
and ones that do not go over the top of the rack so I am e.g. easily take a jumper/coat off and stick it on the rack if I need to when I get too hot ona ride


any recommendations??

any ideas welcome as I am not sure what is available

You know what people will say..... Ortlieb. I have front rollers (called Sport now) for commuting, and recently bought the gravel bags for bike touring as they have a double lower clip for holding the bags on over rough ground.

I like the topeak range. I used smaller version when I used to commute. Easily clicked on/off the rack for taking the bag into the office.
