We haven't got a waitrose within 20 miles.
When my son was little, he used to ask me to go Waitrose because "the cars in the carpark were better"

Not so. Dust with semolina flour to pass though the machine and it is 'no stick' as soon as it is rolled.

Start the pasta, rest dough in fridge for 15 min after kneading. Harvest basil from the garden, whizz up fresh pesto.

Roll pasta. Cut sheets into handkerchiefs, drop into boiling water for 1 to 2 minutes.

Drain and server with pesto.

30 min start to finish.
From what I've read there's and awful lot of resting the dough pre rolling and pasta pre cooking, is that unnecessary as waiting time alone is over and hour?

Real world vs council of perfection.

Try both see if you think the difference worthwhile.

I don't know.

But I do know the standard ideas about putting bread dough in a warm place to rise in an hour, twice ....... work. Sort of.

MUCH better taste and texture if you ignore the advice, and let doughs rise slowly, in the cool, for a LOT longer.

Try both. Quick and dirty, without rests. And slow and loving, with plenty rest (probably double what the recipe says!). And let us know!
