How easy/expensive would it be to upgrade from mechanical discs to hydraulic current breaks are Tektro MD510 with
Shimano Tiagra 10 speed Mechanical Disc.
Shifters
- Tiagra 4700 10 speed.

Very expensive and difficult if you don't know how to bleed them, you will need to replace your brake/shifter levers, calipers and replace the brake cables for hoses, something like this might prove to be a cheaper/easier option.

You can get a good set for less than £100. Check your frame and look at existing routing. If the cable is held on with cable ties or clips at the cable mounts then its easy. If the existing cables run through the cable mounts then its a bit trickier.

Shimano Deore are good. Clarkes have some budget sets too
